I know! I know!
But I don’t have time for it! Oh my gosh! I hear this all day, everyday. Actually I fall into that trap myself sometimes. I know you’ve heard this a bazillion times if not more, but breakfast is the most important meal of the day. Let’s look at the word itself – breakfast. Break (the) fast. You need to feed your body, get the fuel it needs to start the day. It’s kind of like running your car on fumes. We don’t like doing that do we? Hoping we’re going to make it to the gas station before we run out of gas. Think of your body in the same way. I know some of you will disagree with me and that is fine. We can’t all agree on everything all the time, but I have some quick, grab it and go ideas if you’re interested!
Heat the oven to 400 degrees. Spray a muffin tin with your favorite non stick spray. Line the bottom with your choice (this is optional, you don’t have to line at all) of meat. I tend to use deli turkey. Usually a half a slice is more than enough. Crack an egg and drop it into the lined (or unlined) muffin tin. Lightly swish with a fork to break the yolk. Now add whatever your heart desires! Pictured is green pepper, mushroom and Canadian bacon. You may add as little or as much as you want. Cheese is always a fun option. Pop into the preheated oven for 20 minutes. Let cool, remove from the tins and refrigerate in a Tupperware type container. You now have a quick grab and go breakfast.
Café Latte and Fruit
Half a cup of coffee (or water or milk or almond, rice, or coconut milk if you’re not a coffee junkie like me). Add a scoop of protein powder (I like vanilla, but chocolate is good too – think hot chocolate!) Zip it up in your magic bullet (or blender or blender bottle), pour into your travel mug, top with more coffee or whatever liquid you chose. Voila! Breakfast on the go! For a more complete, filling breakfast add a piece of fruit; banana, pear, apple.
Okay, not really a breakfast on the go, but an easy one to prepare ahead of time. Spray your griddle pan and start heating. Crack and whisk 2 to 3 eggs in a small bowl. Add a dash of ground cinnamon and a splash of vanilla extract (both optional). Immerse your bread into the bowl, coating both sides and carefully place on the hot griddle. You’ll probably use about 3 or 4 pieces. Flip and wait another minute or so. Remove from heat. You may add fresh fruit; bananas, blueberries, strawberries… and a bit of syrup (I use sugar free). I tend to make additional pieces so I can refrigerate them for later. See! Another easy peasy breakfast to go!
Notice all three of the above breakfasts have protein and carbs. Best way to start your day! You can also make them very Weight Watcher friendly (sugar free syrup, Healthy Lite bread for example).
