Got it! Ever have those days when you don’t have time to eat something good? By the time you get home you are scarfing down anything you can get your hot little hands on? Been there! Done that! Sad to admit, I still find myself doing that periodically.

I try to have a few “go to’s” readily available in my frig for times like this. They also make great grab and go lunches.

My first favorite is what I call the “Never Ending Salad”.

  • Bag of salad (your choice)
  • 1 can black beans (drained and rinsed)

  • 1 can garbanzo beans (chick peas) (also drained and rinsed)

  • Radishes

  • Celery

  • Onion (red, green, whatever you like)

  • Veggies of your choice

Toss these all together in a large Tupperware bowl. Of course you add whatever you like, the list above is simply suggestions. You now have a nutritious salad ready to go! I find I can get approximately 4 or so nice salads out of this big bowl.

I like to add chicken, hard boiled eggs, salmon, avocado or tuna as a topper on the individual salads. Another idea is to use low fat cottage cheese as dressing.

Great for lunch or as a side for dinner!
